A jubilant and lively fizz. Aromas that are a blend of fruit and fermentation (apricot, apple a toasted note). Harmonious and appetising in the mouth with a slightly acidic point, although the aftertaste is rounded and elegant. A classical finish with plenty of character. CHAMPAGNE & SPARKLING WINES Prior to the late 1400's, the Champagne region of France was in a neck and neck race with Burgundy to produce the finest wines for the French King. Because of its geological proximity to rivers that could easily reach Paris, it typically had the upper hand. But that all changed when a dramatic climate shift moved through the Northern hemisphere in the 1490's. Plummeting temperatures not only caused the premature freezing of major rivers like the Thames, but also brought with them a shorter growing season that hit Champagne particularly hard. Yeast that converted the sugar in pressed grape juice to alcohol suddenly stopped processing mid-season. When the spring came and the temperatures began to rise again the yeast began processing sugars for a second fermentation. This produced an excessive amount of carbon dioxide in the wine and that, as they say, was that. RED WINE SELECTION Founded in 1989, Maison Bouachon presents an exceptional range of wines that share the same house style - the result of practices that extend from the vineyard to final bottling and ageing. The Chteauneuf du Pape is the jewel and the roots of Maison Bouachon, established more than a century ago in the papal summer residence. Several kilometres to the north of Avignon, on the rocky, sun-scorched hills and terraces swept by the fierce Mistral, are the celebrated vineyards of Chteauneuf du Pape, growing on ground covered in large limestone rocks. The  Tiare du Pape originated in the higher terrain above Grs, where the abundance of rounded stones and clay sub-soil combine to give the wine its structure, concentration and elegance. The wine is made from Grenache (60%), Syrah (30%) and Mourvdre and a small proportion of other typical varietals. Small parcels are harvested by hand, before a long period of traditional maceration, ageing and blending. The wine is deep in colour with a complex nose. On the palate it is full, rich and fruity with balanced tannins and pleasing spicy notes. Vicente Noguera y Espinosa de los Monteros. Today he has been succeeded by his son D. Juan Naguera Merle, a worthy representative of the Marquisate which was granted in the XVII century to his ancestor Juan Ambrosio Garcia de Cceres y Montemayor, a Captain of the royal Armada for war merits.
